Great Gun's Oyster Merroirs

Great Gun Shellfish farms oysters across six distinct zones in Moriches Bay, Long Island. Each zone yields oysters with their own flavor signature. This is the merroir. I hadn't come across the word before this project. The marine equivalent of terroir: the idea that an oyster's taste is a direct record of where it grew, the water it filtered, the tidal energy around it, the ecology of the bay. One of those discoveries that makes you want to understand everything about a subject before picking up a pencil.

The Merroirs

Each illustration portrait the environmental conditions influencing the oyster: inlet water flow, tidal wave energy, plankton and algae density, salt marsh, sweet springs, and the wetland ecology of the bay.
